Ripe fruit characters is a reflection of the warm, dry
conditions of 2016. Lemon blossom perfume, plenty
of ripe tropical fruit like melon, guava and passion
fruit and a hint of grass. Tropical fruit follows on the palate, extended time on
the lees adds richness to the wine and fresh acidity leaves a crisp, dry finish

Groot Constantia - Sauvignon Blanc 2016

  • Vintage: 2012 Winemaker: Boela Gerber Grapes: 100% Sauvignon Blanc Soil: Hutton and Glenrosa Fermentation: Grapes were hand picked early in the morning to retain the delicate fruit flavours. They go straight into the press and only the free run juice is used. The juice is settled until clear and cold fermented (12 – 140C) in stainless steel to enhance the typical varietal characters. Maturation: After fermentation, the wine is left on the lees for three months before being racked, fined and stabilized in preparation for bottling. Colour: Lively lime green colour Nose: A Sauvignon blanc typical of cool climate growing areas. The wine has a lively lime green colour. Lots of tropical fruit like guava, papaya and granadilla jumps out of the glass, followed by hints of herbaceous character. Palate: Rich and creamy, with lots of sweet tropical fruit, beautifully balanced by a fresh acidity. Food Suggestion: Fresh mussels with garlic butter, tuna carpaccio drizzled with virgin olive oil. Grilled calamari in a lime and ginger marinade. Alcohol: 13.97% vol Residual sugar: 2.2 g/l TA: 6.3g/l pH: 3.27
